Homemade Onion Gravy (NO Flour or Cornstarch!)

You read that right! This homemade onion gravy is made with just a few simple ingredients and none of them are flour or cornstarch!

I experimented with this recipe while on a gluten free diet to see if it was possible to make a decent (and edible) gravy without using wheat flour or anything else as a thickener. The end result was better than expected!

Will it Taste Just Like Onions? 🧅

Yes! It will have an onion flavor because onions are the star of the show, but the caramelization adds depth so that it doesn’t taste like raw onion (yuck!).

This gravy is made by caramelizing onions in a pan and then blending with beef broth. I like to sauté my onions before caramelizing to add more savoriness and color to the final product. I used ghee in the video, but any high heat cooking oil or fat will work.

The type of onions you’re using can also impact the overall flavor. I like to use sweet yellow onions because I personally like the added sweetness, but white onions would also work well to create a more neutral flavor.

Beef broth also helps cut down on the onion flavor, but you can use chicken/veggie broth or water if you prefer. But don’t stop there! You can also add other seasonings, herbs, balsamic vinegar, or red wine while the onions are caramelizing for more flavor.

How Does it Thicken?

I use an immersion blender to blend all ingredients together while still hot. It works really well to blend everything to a smooth consistency. If you don’t have an immersion blender, then a regular blender that can hold hot liquids would also work.

Just add everything into the blender once the onions are caramelized and blend until smooth. Be sure to mix everything while it’s still hot because the consistency may not be as smooth if cooled down too much.

Tips

This recipe is easy but can be a bit time consuming, especially if you’re making a large batch. One trick I use to speed up the caramelization process is to add a pinch of baking soda while the onions are cooking.

This is completely optional but I found it makes a huge difference in cooking time and it doesn’t change the flavor profile in any way – just don’t add too much!

Storage

This gravy can be kept in the freezer for 3 – 6 months. Allow to cool completely before storing in an airtight container.

Ingredients

  • 2 tbsp cooking fat or oil
  • 1 large onion, thinly sliced
  • 1/2 cup beef broth
  • A pinch of baking soda, optional

Instructions

  1. Preheat saucepan on medium heat and add oil.
  2. Add onions and sauté for a few minutes until browned. Stir frequently so onions don't burn.
  3. Turn heat to medium-low and cook until onions begin to caramelize. Stir occasionally.
  4. When onions begin to soften, add baking soda (if using). Stir until combined.
  5. Continue cooking until onions are desired color and have softened more. Add broth.
  6. Use an immersion blender and blend until smooth and thickened.

Notes

  • Ghee is used in the video, but any high heat cooking fat should work!
  • Add garlic cloves for extra flavor!
